For the Para la Salsa de Chipotle

2 Chipotles

1 Diente Ajo

2 Ramas Cebollin

Sal al gusto

Chorrito de limón

1 Taza Mayonesa

For the Para las Cebollas Encurtidas

1 ½ Cebolla Morada

1 ½ Taza Agua

1 Taza Vinagre Blanco

1 Cda Sal

¼ Taza Azucar

Pimienta Negra entera

For the Para armar Taco

Queso Mozarella

Tortilla de Maiz

Pernil

Salsa de Chipotle

Cebollas Encurtidas

Rábano

For the Chipotle Sauce

2 Chipotles

1 Garlic Clove

2 Green Onion Stalks

Salt to taste

A squeeze of lemon

1 cup Mayonnaise

For the Pickled Onions

1 ½ Red Onion

1 ½ cup Water

1 cup White Vinegar

1 tbsp Salt

¼ cup Sugar

whole Black Pepper

For the Taco Assembly

Mozzarella Cheese

Corn Tortilla

Pork Shoulder

Chipotle Sauce

Pickled Onions

Radish

Step 1

Para la salsa en una licuadora coloca todos los los ingredientes hasta disolver todo por completo.

1 Diente Ajo

2 Ramas Cebollin

Sal al gusto

Chorrito de limón

1 Taza Mayonesa

For the Para las Cebollas Encurtidas.

Step 1

Coloca en una olla agua, vinagre, azúcar, sal, pimienta y deja hervir.

Step 2

Corta la cebolla, envasa y agrega la mezcla del vinagre tibio. Refrigera por minimo por 24 horas.

Step 3

For the armar los Tacos.

Step 1

En un sartén coloca queso rallado y espera que se funda para colocar la tortilla encima, cocina por por ambos lados.

Step 2

Sirve con Pernil, salsa de chipotle, cebollas encurtidas, rábano picado y cilantro fresco.

For the sauce, place all the ingredients in a blender and blend until completely dissolved.

Step 2

For the Pickled Onions.

Step 1

Place water, vinegar, sugar, salt, pepper in a pot and bring to a boil.

Step 2

Cut the onion, jar it and add the warm vinegar mixture. Refrigerate for at least 24 hours.

Step 3

To assemble the Tacos.

Step 4

In a pan, place grated cheese and wait for it to melt before placing the tortilla on top, cook on both sides.

Step 5

Serve with Pernil (roast pork), chipotle sauce, pickled onions, chopped radish and fresh cilantro.
