Step 1
Para el pure de remolacha corta los extremos, agrega aceite de oliva, sal, pimienta, envuelve en papel de aluminio y cocina a 375°F o 190°C por 30-45 minutos.
Step 2
Con un batidor de mano tritura la remolacha con el caldo de pollo y reserva.
Step 3
Pica y en un sartén sofríe cebolla y ajo en 2 cdas de aceite de oliva.
Step 4
Incorpora el arroz y sofríe por 5 minutos.
Step 5
Agrega el Vino y deja reducir.
Step 6
Incorpora 1/2 Taza de Caldo de Pollo caliente y cocina hasta reducir completamente.
Step 7
Repite el proceso del caldo por 15 minutos revolviendo constantemente.
Step 8
Al finalizar los 15 minutos agrega el pure de remolacha y cocina por 2 minutos mas.
Step 9
Apaga el fuego, tapa y deja reposar por 5 minutos.
Step 10
Incorpora mantequilla y queso parmesano y revuelve constantemente hasta cremar.
Step 11
Sirve y esparce en el plato, agrega queso de cabra, nueces y como decoración un poco de microverduras.

For the beet puree, cut off the ends, add olive oil, salt, pepper, wrap in aluminum foil and bake at 375°F or 190°C for 30-45 minutes.

With a hand blender, crush the beet with the chicken broth and set aside.

Chop and sauté onion and garlic in 2 tablespoons of olive oil in a pan.

Add the rice and sauté for 5 minutes.

Add the wine and let it reduce.

Add 1/2 cup of hot chicken broth and cook until completely reduced.
Step 7
Repeat the broth process for 15 minutes, stirring constantly.
Step 8
At the end of the 15 minutes, add the beet puree and cook for 2 more minutes.
Step 9
Turn off the heat, cover and let it rest for 5 minutes.
Step 10
Add butter and Parmesan cheese and stir constantly until creamy.
Step 11
Serve and spread on the plate, add goat cheese, walnuts and for decoration a little microgreens.
