A very special recipe for me. During my early years in 🇺🇸 My mom sold hallacas every December to get us ahead. It's not a traditional recipe but for me it's the best, since the best hallacas are my mom's. So here I leave you my version. Merry Christmas!

For the Guiso

Aceite de Oliva (Para sofreír)

1 kg Cochino

1 kg Carne de Res

2.8 kg Gallina (Cocida y Mechada)

½ Cabeza de Ajo

½ Taza Alcaparras

5 ½ Taza Encurtido

4 Cebollas

3 Pimentones

2 Ajoporro

½ Ramo Perejil

2 Tazas Chicharrón Molido

750 gr Tomate

1 Taza Vino Sanson

3 Tazas Caldo de Gallina

½ Taza Harina de Maíz Precocida

For the Cocinar la Gallina

Zanahoria

Apio

Cebolla

Pimienta en grano

Gallina entera

Agua

1 Hoja de Laurel

For the Masa

1 kg Harina Harina de Maíz Precocida

5 ½ Taza Aceite Onotado (Aceite Vegetal + 4 Cdas Onoto)

2 Cdas sal

Caldo de Gallina (Hasta obtener la consistencia)

For the Relleno

3 Pimentones

4 Cebollas

2 Tazas Aceitunas Verdes

5 ½ Taza Pasas

½ Taza Alcaparras

For the Stew

Olive Oil (For frying)

1 kg Pork

1 kg Beef

2.8 kg Hen (Cooked and Shredded)

½ Head of Garlic

½ cup Capers

5 ½ cup Pickles

4 Onions

3 Bell Peppers

2 Leeks

½ Parsley

2 cup Ground Pork Rinds

750 gr Tomato

1 cup Sanson Wine

3 cup Chicken Broth

½ cup Pre cooked Corn Flour

For the Cooking the Hen

Carrot

Celery

Onion

Peppercorns

whole Hen

Water

1 Bay Leaf

For the Dough

1 kg Pre cooked Corn Flour

5 ½ cup Annatto Oil (Vegetable Oil + 4 Tbsp Annatto)

2 tbsp Salt

Chicken Broth (Until obtaining the consistency)

For the Filling

3 Bell Peppers

4 Onions

2 cup Green Olives

5 ½ cup Raisins

½ cup Capers

Step 1

Sofríe hasta dorar carne de res y cerdo (Por separado) con aceite de oliva, sal, pimienta y aparta.

Step 2

En un procesador de alimentos coloca cebolla, pimentón, ajoporro y ajo.

Step 3

En una olla coloca el sofrito, aceite de oliva, sal, pimienta y sofríe.

Step 4

Agrega perejil, cilantro, chicharrón picado, las carnes, el vino y reduce.

Step 5

Agrega tomate rallado, caldo de gallina tapa y cocina por 1 hora a fuego bajo.

Step 6

Para cocinar la gallina en una olla agrega todos los ingredientes y cocina por 90 minutos.

Step 7

Incorpora en el guiso la gallina mechada, encurtido, alcaparras, harina de maíz precocida mezcla y deja enfríar.

Step 8

Cocina a fuego bajo aceite vegetal y onoto hasta que desprenda el color.

Step 9

En un bol coloca harina de maíz precocida, sal, aceite onotado y amasa.

Step 10

Agrega caldo de gallina hasta obtener una masa suave.

Step 11

En una hoja de plátano coloca aceite onotado, masa, guiso, cebolla, aceitunas, pimentón, pasas, alcaparras, y envuelve.

Envuelve en papel de aluminio y cocina a vapor por 1 hora.

Step 1

Sauté beef and pork (separately) with olive oil, salt, pepper until browned and set aside.

Step 2

In a food processor, place onion, bell pepper, leek, and garlic.

Step 3

In a pot, put the sautéed mixture, olive oil, salt, pepper and sauté.

Step 4

Add parsley, cilantro, chopped pork rinds, the meats, wine and reduce.

Step 5

Add grated tomato, chicken broth, cover and cook for 1 hour over low heat.

Step 6

To cook the hen in a pot, add all the ingredients and cook for 90 minutes.

Step 7

Incorporate the shredded chicken, pickles, capers, precooked cornmeal into the stew, mix and let it cool.

Step 8

Cook vegetable oil and annatto over low heat until it releases its color.

Step 9

In a bowl, place precooked cornmeal, salt, annatto oil and knead.

Step 10

Add chicken broth until you get a soft dough.

Step 11

On a platano leaf, place annatto oil, dough, stew, onion, olives, bell pepper, raisins, capers, and wrap.

Step 12

Wrap in aluminum foil and steam for 1 hour.
