1 kg Lechosa o Papaya

0.5 kg Piña (opcional)

2 Tazas Azúcar Blanca

200 gr Panela (Papelón)

½ Taza Vinagre de Manzana

5 Clavos de Olor

1 Anis Estrellado

1 Palito Canela

2 Litros Agua

½ Taza Bicarbonato de Sodio

1 kg Papaya

0.5 kg Pineapple (optional)

2 cup White Sugar

200 gr Brown Sugar Loaf (Panela)

½ cup Apple Cider Vinegar

5 Cloves

1 Star Anise

1 Cinnamon Stick

2 L Water

½ cup Baking Soda

Step 1

Pela la lechosa, retira la semillas y corta en pedazos.

Step 2

Coloca en un bol la lechosa, agua, bicarbonato de sodio y remoja de 2-8 horas.

Step 3

En una olla coloca agua, lechosa previamente colada, piña en cuadritos, panela rallada, azúcar, vinagre de manzana, clavos de olor, anis estrellado, canela y cocina a fuego medio bajo por 3-4 horas o hasta que este blando por dentro.

Step 1

Peel the papaya, remove the seeds and cut into pieces.

Step 2

Place the papaya, water, baking soda in a bowl and soak for 2-8 hours.

Step 3

In a pot, add water, the previously strained papaya, diced pineapple, grated panela (unrefined whole cane sugar), sugar, apple cider vinegar, cloves, star anise, cinnamon and cook over medium-low heat for 3-4 hours or until it is soft inside.
